Geoduck

Pronounced gooey-duck. The largest burrowing clam on Earth, hand-dug from the gravel beaches of the Salish Sea. Crisp, sweet, faintly cucumber — the prized sashimi clam of the Pacific.

How we harvest

Tribal and state-licensed divers hand-pick each geoduck from beds 20–100 feet below the surface. No dredging, ever.

How to prepare

Blanch the siphon 10 seconds, peel the skin. Slice paper-thin for sashimi or crudo. The body meat is excellent in chowder.

Size & yield

A typical clam is 2–3 lbs and yields about 50% edible meat — siphon for sashimi, body for cooking.
